Our dough contains only Tipo "00" flour, water, salt and fresh yeast.Its proved for 24 hours minimum.This creates depth of flavour, a "crunchy but soft" texture and an airy crust, which is light and easily digestible.We use Fior Di Latte mozzarella and only San Marzano (DOP) tomatoes & sea salt for the sauce.
